Lemon Pepper Chicken & Steamed Broccoli and Asparagus




My friend, Mark came over this Super Bowl Sunday to demonstrate a new recipe. He's a model on a new, healthy diet in preparations for a photo shoot in the coming weeks.

I was initially afraid for my taste buds, but was pleasantly surprised by the end results.

You must understand that in my world, "healthy" translates to unappetizing, rabbit food. It has the same connotations as being set up on a date with someone who "has a great personality." They're both phrases that send up warning flags.

In this instance however, I was wrong. The dish is healthy, it was quick to make, very affordable.... AND DELICIOUS.

I paired it with a nice bottle of Bud Light that accentuated the flavor of the Lemon Pepper Chicken.


Prep Time 10 min
Cook Time 30 min (for the chicken)
(the veggies only take 6-8min)
Total cook Time 40 min



What you need (for 1 person)

-1 boneless skinless chicken breast (about 8 oz)
(can be fresh or frozen)
-1 head of fresh broccoli
-6 stems of Asparagus

-1tbsp lemon juice
-1 tsp lemon pepper seasoning
(i used McCormick Grill Mates- Lemon pepper with Herbs)
-1 tsp butter or margarine
(spray butter with 0 calories is best)
-1/2 tsp garlic powder
(I used Trader Joe's California Garlic Powder)

-1 pyrex baking pan
(or any glass or metal baking pan)
-1 medium sized pot to steam the veggies
-1 steamer basket (you can also just boil vegetables it you don't have a steamer, but you lose some of the vitamins in the water)



Step by step directions:


Step 1: Preheat the oven to 375 degrees

Step 2: Lay out the chicken on a plate or cutting board and cover both sides in Lemon pepper Seasoning.

Step 3: Place chicken in pyrex baking pan and put in oven for 30 min.


Step 4: wash both the broccoli and asparagus

Step 5: cut off stems of broccoli and 1 inch from bottom of asparagus.

Step 6: put 1 inch of water, 1 pinch of salt, and 1 tbsp of lemon juice in medium sized pot. Place steamer basket in pot.

Step 7: Place broccoli and asparagus in steamer basket and cover with a lid
-note: you may need to cut asparagus in half in order to fit
*do not turn on stove-top until 10 min left on timer for oven

Step 8: Turn on stove top to high when 10 min left on oven timer, and steam vegetables for 10 min.


Step 9: Remove chicken from stove, and check to see if broccoli is done. (pierce a piece of broccoli with a fork. If it is tough to pierce, it may need 1-2 more min depending on temp of stove-top.)

Step 10: Serve chicken and vegetables on plate, and add garlic powder and butter to vegetables.
