My friend, Mark came over this Super Bowl Sunday to demonstrate a new recipe. He's a model on a new, healthy diet in preparations for a photo shoot in the coming weeks. I was initially afraid for my taste buds, but was pleasantly surprised by the end results. You must understand that in my world, "healthy" translates to unappetizing, rabbit food. It has the same connotations as being set up on a date with someone who "has a great personality." They're both phrases that send up warning flags. In this instance however, I was wrong. The dish is healthy, it was quick to make, very affordable.... AND DELICIOUS. I paired it with a nice bottle of Bud Light that accentuated the flavor of the Lemon Pepper Chicken.
